We offer two types of maturing in our cellars on wooden boards.From three to five months’ maturing: a beautiful marbled ochre paste, with a golden, buttoned rind. Its light, nutty, fruity taste is reminiscent of the flora of the high plateaux, particularly licorice.More than 6 months maturing: behind a pretty rind lies a dense, compact paste. It’s at this point in the maturing process that SALERAC takes on its full roundness of flavor.
